Chicory is a rather useful plant, although many ley-men regard it as a weed. Chicory roots, leaves, and flowers are all beneficial in more ways than one. The entire plant is food in one form or another.
Chicory is a perennial herb with a bitter taste. It is most commonly used as a coffee substitute and has been used as a medicinal herb for centuries. It is high in inulin, a type of soluble fiber that helps with digestion, and is loaded and minerals including vitamin A, vitamin C, calcium, potassium, and magnesium. Chicory is also a prebiotic, which means it helps to nourish the beneficial bacteria in your gut. Research suggests that it may help reduce inflammation, improve digestion, and even help with weight loss.
